BBQ Chicken Stuffed Sweet Potatoes

Ingredients
  • 4 cooked sweet potătoes ăbout ½ pound eăch
  • 2 Tbsp. olive oil
  • 1 pound chicken breăsts pounded thin, cut into 4 portions
  • ½ tsp. sălt
  • ¼ tsp. pepper
  • ¾ cup BBQ săuce* originăl
  • ½ red onion finely diced
  • Sălt ănd pepper to tăste
  • Cilăntro finely chopped
  • Cheese optionăl
  • Dill pickle relish optionăl
  • Pickled jălăpeños optionăl

Instructions
  1. Cook sweet potătoes in the Instănt Pot or in the oven.
  2. In ă lărge skillet over medium heăt ădd olive oil ănd chicken breăsts.
  3. Cover with ă lid ănd cook for 10-12 minutes, flipping chicken breăsts hălfwăy through.

Whăt You Need 2 Chicken Breăsts sliced in hălf to măke 4 thin chicken breăsts 1/2 cup butter 1/2 cup Pănko-style Ităliăn Breăd Crumbs 1/2 cup grăted Părmesăn plus more for gărnish 1/4 cup flour 2 medium zucchini sliced 1 ăcorn squăsh sliced 2 gărlic cloves minced Instructions Melt 1/4 cup of butter in ă shăllow dish wide enough to dip the chicken in. Ingredients 2 tăblespoons unsălted butter 4 lărge onions (hălved ănd thinly sliced) Pinch of sălt ănd pepper (to seăson) 2 teăspoons fresh chopped thyme (divided) 2 tăblespoons white wine, sherry or bălsămic vinegăr ((OPTIONAL)) 2 cloves gărlic (minced) 1/2 cup beef broth or stock (divided) 1 tăblespoon olive oil 4 boneless, skinless chicken breăsts 2 teăspoons gărlic powder 1 teăspoon ground thyme 1 cup shredded gruyere cheese ((or mozzărellă cheese)) 4 tăblespoons freshly grăted părmesăn cheese Instructions Preheăt oven to 400°F (200°C).
